The curse has been lifted...

Maybe. I'm not sure yet. But at least I've discovered that the curse has a pierceable veil.

Where am I going with this analogy? I have no idea.

But anwyay. I have discovered that despite my years and years of being cursed to only cook food that turns out totally wretched and disgusting, I have in the past few weeks cooked SEVERAL (not one, not two, not three, but SEVERAL) delicious meals.

Last night's triumph? HOMEMADE LASAGNA. Lasagna that wasnt out of a box. Lasagna that didn't come out of my freezer. Lasagna with WHOLE WHEAT NOODLES.

And it rocked my face off, right down to the taste buds.

And just because I want you to share in my victory over the curse of the wretched and disgusting meals, I am going to share the recipe with you.

Linda's Lasagna

Ingredients--

  1. 1 lb ground beef
  2. 1 onion, chopped
  3. 2 (6 oz) cans tomato paste (although I just used one)
  4. 1 (14.5 oz) can crushed tomatoes
  5. 2 cups water
  6. 1 T. dried oregano
  7. 2 t. garlic powder
  8. 2 t. salt
  9. 1/4 t. ground black pepper
  10. 1 T. white sugar (I used splenda)
  11. 12 oz cottage cheese
  12. 1/2 cup grated parmesan cheese
  13. 1 egg
  14. 9 lasagna noodles (I used whole wheat)
  15. 1 lb shredded mozzarella cheese

Directions

  1. In a large skillet over medium heat, cook beef until brown. Drain. In another skillet over medium heat, cook onion until translucent. Combine beef and onion in a large saucepan with tomato paste, crushed tomatoes, water, oregano, garlic powder, salt, pepper, and sugar.  Cook over medium heat until mixture comes to a boil. Reduce heat to low and simmer for 1 hour.
  2. While sauce is simmering, blend cottage cheese, parmesan, and egg until smooth.  Set aside.
  3. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8-10 minutes or until al dente. Drain.
  4. Preheat oven to 350 degrees F.
  5. Spread 1 cup of sauce in the bottom of a 9x13 inch baking dish. Cover sauce with 3 nodles.  Cover noodles with 1/3 of the remaining sauce. Top with half of the mozzarella. Place another layer of 3 noodles, then another layer of sauce. Cover with cottage cheese mixture. Top with remaining 3 noodles, then the remaining sauce.
  6. Bake in preheated oven for 30 minutes. Sprinkle remaining mozzarella on top and bake 15 minutes more, until golden and bubbly.

Note: You may want to put dish on top of a baking sheet while its cooking.  Mine bubbled over the edges a little, and having it on a baking sheet kept my oven clean!
